A note from Helton: I talked to Frank at Hunts Point about the cooking classes and demos that we do at Barcelona, and I told him that it would be cool if he brought a big tuna and did it as a demo as a cooking class. He said that would be very cool, so keep your eyes open! Also I found baby sepia (cuttlefish), which I’ve only seen in Spain. So I bought them, and it’s on the menu tonight.
