This week, Hunts Point Fish Market honors go to Roy Riedl, our sous chef in West Hartford. His fish picks for the week:
The narket was full of Snapper and Skate Wing. The first time I went to the market with Chef Adam Greenberg, we got whole skate wing and it was the most delicious fish I have ever eaten, so with the excess of skate wing, it was an obvious choice. I had a request for scallops for the weekend, so Frank showed me these beautiful divers…I had to get them.

We get snapper a lot, but never got in yellowtail so I figured I would give it a shot. Then finally, I wanted to get something inexpensive and different to play with, so we saw these beautiful monk livers and decided to go for it.
